Superfood Lemonade

This superfood lemonade combines blue spirulina chia gel, fresh lemon and orange juice sweetened with maple syrup, and butterfly pea tea. Layer everything over ice for a refreshing drink that naturally changes color as the layers mix.

Ingredients
  

Blue Chia Layer

  • 1 Tbsp chia seeds
  • 2 Tbsp water
  • 1/4 tsp blue spirulina

Citrus Lemonade Layer

  • 1 1/2 lemons juiced
  • 1/2 orange juiced
  • 1 –2 Tbsp maple syrup
  • 3/4 –1 cup cold water
  • Tiny pinch of sea salt optional

Butterfly Pea Tea Layer

  • 1/2 tsp butterfly pea powder
  • 3/4 cup near-boiling water

Optional

  • Lemon slices
  • Orange slices
  • 1-2 cups Ice

Instructions
 

  • Mix chia seeds, water, and blue spirulina in a small cup.
  • Stir well and let sit for 10–15 minutes.
  • For a thicker gel, let the mixture sit for 20 minutes.
  • Combine lemon juice, orange juice, maple syrup, and water.
  • Start with 1 Tbsp maple syrup and adjust to taste.
  • Add a tiny pinch of sea salt if desired.
  • In a separate glass, pour near-boiling water over the butterfly pea powder.
  • Whisk until completely smooth and blue.
  • Let the butterfly pea tea cool for 15 minutes or until room temp.
  • Add the blue chia gel to the bottom of a clear glass.
  • Fill the glass about halfway with ice.
  • Slowly pour the citrus lemonade over the ice.
  • Pour the butterfly pea tea slowly over the top to transform the colors.
  • Add lemon and orange slices for a colorful finish.
  • Keep the layers separate until ready to drink and mix for the best visual effect. Enjoy!
