How To Make The Blue Chia Layer

Stir everything together really well to distribute the spirulina.
Let the mixture sit for at least 10 to 15 minutes.
Twenty minutes gives the chia seeds more time to develop their gel-like texture.
How To Make The Citrus Lemonade
Juice the lemon and orange into a separate container.
Add the maple syrup and cold water.
Start with 1 tablespoon of maple syrup.
Taste the mixture and add more maple syrup if needed. Sub raw honey or any other liquid sweetener.
A tiny pinch of sea salt is optional. Stir everything together.

How To Make The Layers Look PERFECT
Use large ice cubes whenever possible. Larger ice cubes melt more slowly and help maintain cleaner layers.

This helps prevent the top layer from immediately sinking. Clear wide glasses also make the colors much easier to see. I recommend the glass I used which is THIS WECK JAR!

Ingredients

- 1 Tbsp chia seeds
- 2 Tbsp water
- 1/4 tsp blue spirulina
Citrus Lemonade Layer
- 1 1/2 lemons juiced
- 1/2 orange juiced
- 1 –2 Tbsp maple syrup
- 3/4 –1 cup cold water
- Tiny pinch of sea salt optional
Butterfly Pea Tea Layer
- 1/2 tsp butterfly pea powder
- 3/4 cup near-boiling water
Optional
- Lemon slices
- Orange slices
- 1-2 cups Ice
Instructions
- Mix chia seeds, water, and blue spirulina in a small cup.
- Stir well and let sit for 10–15 minutes.
- For a thicker gel, let the mixture sit for 20 minutes.
- Combine lemon juice, orange juice, maple syrup, and water.
- Start with 1 Tbsp maple syrup and adjust to taste.
- Add a tiny pinch of sea salt if desired.
- In a separate glass, pour near-boiling water over the butterfly pea powder.
- Whisk until completely smooth and blue.
- Let the butterfly pea tea cool for 15 minutes or until room temp.
- Add the blue chia gel to the bottom of a clear glass.
- Fill the glass about halfway with ice.
- Slowly pour the citrus lemonade over the ice.
- Pour the butterfly pea tea slowly over the top to transform the colors.
- Add lemon and orange slices for a colorful finish.
