Turning peaches into the most delicious healthy peach cobbler ice cream popsicles seemed like a no brainer!
In summer months I love peach cobbler with vanilla ice cream but some days are just too hot to turn on the oven! Plus, I love ice cream! This recipe turned out so good and no dairy, gluten or refined sugar needed.
The beauty about this recipe is that you can use up your ripe peaches or nectarines to have this incredible frozen dessert on hand for weeks if you want!
Don’t have access to fresh peaches? No worries, you can make this recipe using frozen peaches just allow them to thaw before cooking them on the stove top.
Ingredients for these Healthy Peach Cobbler Ice Cream Popsicles:
Peaches (I used yellow but you can also sub nectarines or use a combo)
Coconut sugar
Maple syrup
Lemon juice
Coconut cream (this is the brand I use and love, it’s really easy to make ice cream with minimal ingredients)
Almond butter or cashew butter
Vanilla extract (optional)
Vegan gluten-free cookies (I recommend these Mexican shortbread cookies or these vanilla cookies but you can use any kind that you prefer)
A little refined coconut oil
What You Need to Make Them:
BPA-Free Silicone Popsicle Molds (I love these so much! They are the perfect size too)
Magic Bullet Blender or smaller blender works best
This recipe combines the flavors of delicious peach cobbler filling with a cobbler crumble crust and delicious vanilla ice cream! The perfect combo in my opinion!
Since this recipe is made using all whole food plant-based ingredients and is low in refined sugar I have been having a popsicle as a mid afternoon snack to cool off and it has been heavenly 🙂
And the best way to make these healthy peach cobbler ice cream popsicles is by using these silicone molds to layer in some of the peach cobbler filling purée, the crumble layer, and the ice cream.
I love these molds because they’re reusable and so easy to pop out the ice cream popsicles whenever you’re ready to eat them and you don’t have to let them thaw before taking them out of the molds.

Healthy Peach Cobbler Ice Cream Popsicles
Equipment
- magic bullet blender
- silicone popsicle molds
Ingredients
Peach Cobbler Filling
- 3 peaches peeled and sliced
- 1 tbsp coconut sugar
- 1 tbsp maple syrup
- 1 tsp lemon juice
Dairy free Ice Cream
- 1 13 oz can coconut cream
- 1 tbsp almond or cashew butter
- 1 tbsp maple syrup
- 1 tsp vanilla extract optional
Crumble Mixture
- 8 gluten free vegan cookies see options linked above
- 2 tsp melted coconut oil if using *Emmys brand cookies, you can slip the coconut oil)
Instructions
- To a sauté pan on low-medium heat, combine peach cobbler filling ingredients and sauté for about 10-15 minutes until peaches are cooked and slightly caramelized.
- Add peach filling to a blender and blend until pureed and set aside in a small bowl.
- Clean and add you cookies to the blender and blend until it biomes crumbles in another small bowl. Mix in a few tsp of coconut oil.
- Then add all your ice cream ingredients to the blender and blend until very smooth.
- To your popsicle molds, add in a few teaspoons of peach filling and the cookie mixture then pour the ice cream mixture in. Top with a few more small dollops of the the peach filling and cookie mixture and use a toothpick to mix together.
- Close the silicone molds and add popsicle sticks and freeze for several hours or overnight.
- Enjoy!
