This homemade peanut butter crunch cereal is made using only 5 ingredients! This can be eaten as a snack or a cereal with your favorite plant milk of choice.
Being vegan and gluten free for years now, I really missed cereal that was free of refined sugars yet still delicious! And let me tell you, this cereal is it!
There are also a few variations and options so if you don’t eat chocolate or nuts.
Recently on social media, I saw a lot of people sharing rice cake recipes! Variations of things to put onto a rice cake.
I love to see it as I’m gluten free but I have been eating rice cakes every which way for at least 15 years now!
I knew there was something more I could do with them because I just love the crunchy texture. So came the idea to make it into a crunch cereal!
A Simply Perfect, Simple Recipe
It’s a little mind blowing that this recipe is SO easy to make and was under my nose the whole time.
All you need is:
Chocolate Bar
Unrefined Coconut Oil
Peanut Butter (see substitutions below)
Maple Syrup
Rice Cakes (I used lightly salted brown rice cakes)
Once you combine all your ingredients, spread out onto a baking sheet lined with parchment paper.
You can place is the refrigerator for about 20-30 minutes or simply pop into the freeze for about 5 minutes and they are ready to eat!
FAQs
What if I don’t eat chocolate? Can I still make this recipe?
Yes, you can either add a little more coconut oil and peanut butter to the recipe or use my favorite chocolate and caffeine free “chocolate bar” by Better Carob. I’ve already made it twice with Better Carob and I couldn’t tell the difference.
Can this recipe be peanut or nut free?
Absolutely! If you can’t have peanut butter, almond, hazelnut or cashew work great! If you are nut free, you can use a seed butter instead. I love tahini or sunflower butter- these mimic the taste of peanut butter without the peanuts.
Can this recipe be sugar free?
This recipe is completely refined sugar free with maple syrup but you can omit it and it is still sweet with the chocolate.
Peanut Butter Crunch Cereal (vegan + gluten free)
Ingredients
- 1 1/2-2 lightly salted brown rice cakes
- 1/2 2 oz chocolate or carob bar
- 2 tsp refined coconut oil
- 1 1/2 tbsp peanut butter or nut/seed butter of choice
- 1-2 tsp maple syrup
Instructions
- Into a small sauté pan, combine chocolate bar and coconut oil and melt on a low heat and add to a bowl (or melt together in a bowl in the microwave).
- Add in peanut butter and maple syrup and mix until smooth.
- Use your hands to crumble the rice cakes into the bowl. Mix until well coated.
- Place rice cake mixture onto a baking sheet lined parchment paper and spread out so there is space between the pieces.
- Place in the fridge for 20-30 minutes or freeze for about 5 minutes. Then use a spatula to gently scrape the cereal off the parchment paper.
- Eat by itself as a snack or as a cereal with your favorite dairy free plant milk.
- Store in an airtight container in the fridge.

I made it with 85% dark chocolate and peanut butter with bits of peanuts. Very easy and fun to make! The best thing is that the glazing protects the ricecake crumbles pretty well , keeping it nice and crunchy and doesn’t turn soggy! Absolutely brilliant!
