Peanut Butter Crunch Cereal (vegan + gluten free)

The best vegan breakfast made with only 5 ingredients! Including varaitions to be peanut butter or nut free. Made without any refined sugar. It's so easy to make, this is a must try!

Ingredients
  

  • 1 1/2-2 lightly salted brown rice cakes
  • 1/2 2 oz chocolate or carob bar
  • 2 tsp refined coconut oil
  • 1 1/2 tbsp peanut butter or nut/seed butter of choice
  • 1-2 tsp maple syrup

Instructions
 

  • Into a small sauté pan, combine chocolate bar and coconut oil and melt on a low heat and add to a bowl (or melt together in a bowl in the microwave).
  • Add in peanut butter and maple syrup and mix until smooth.
  • Use your hands to crumble the rice cakes into the bowl. Mix until well coated.
  • Place rice cake mixture onto a baking sheet lined parchment paper and spread out so there is space between the pieces.
  • Place in the fridge for 20-30 minutes or freeze for about 5 minutes. Then use a spatula to gently scrape the cereal off the parchment paper.
  • Eat by itself as a snack or as a cereal with your favorite dairy free plant milk.
  • Store in an airtight container in the fridge.
