Peanut Butter Crunch Cereal (vegan + gluten free)
The best vegan breakfast made with only 5 ingredients! Including varaitions to be peanut butter or nut free. Made without any refined sugar. It's so easy to make, this is a must try!

Ingredients

lightly salted brown rice cakes
1/2
2 oz
chocolate or carob bar
2
tsp
refined coconut oil
1 1/2
tbsp
peanut butter
or nut/seed butter of choice
1-2
tsp
maple syrup
Instructions
Into a small sauté pan, combine chocolate bar and coconut oil and melt on a low heat and add to a bowl (or melt together in a bowl in the microwave).
Add in peanut butter and maple syrup and mix until smooth.
Use your hands to crumble the rice cakes into the bowl. Mix until well coated.
Place rice cake mixture onto a baking sheet lined parchment paper and spread out so there is space between the pieces.
Place in the fridge for 20-30 minutes or freeze for about 5 minutes. Then use a spatula to gently scrape the cereal off the parchment paper.
Eat by itself as a snack or as a cereal with your favorite dairy free plant milk.
Store in an airtight container in the fridge.
