Vegan Caramelized Onion Sun-dried Tomato Pasta

This Vegan Caramelized Onion Sun-dried Tomato Pasta is vegan, gluten free and one of the perfect Italian comfort food recipes, especially for Fall/Winter months and it only has a few main ingredients.

- 1 red or yellow onion thinly sliced
- 3 shallots thinly sliced (optional)
- 1 tbs avocado oil
- 1/2 cup tomato paste
- 1/2 cup sundried tomato’s chopped
- 3 tsp coconut aminos
- 1/4 tsp Sea salt
- 1/2 cup of pasta water add a few more tbsp if needed
- 10 oz pasta of choice I used gluten free spaghetti
- fresh cracked pepper to taste
- chili flakes, to taste optional
Thinly slice onions and shallots using sharp knife.
Combine onions and shallots and avocado oil into a sauté pan and cook on a medium heat for about 20 mins or until slightly golden brown.
Adding a few tablespoons of water as you go to deglaze the pan when the pan begins to get dry.
Once the onions are caramelized, add in tomato paste, coconut aminos, sun-dried tomatoes, pasta water, salt, pepper and chili flakes.
Bring to a low simmer for 10 mins then add in 1/2 cup of pasta water and cooked pasta.
Mix until well combined and serve with some fresh chopped parsley!
