Roasted Cabbage Steaks with Savory Peanut Sauce (vegan & gluten free)

Ingredients
1
savoy cabbage
sliced into 1 inch thick pieces
Savory Peanut Sauce Marinade:
1/3
cup
peanut butter
smooth and unsalted
3
tsp
sriracha
2
tbsp
coconut aminos
1
tbsp
avocado oil
2
tsp
coconut sugar
1
inch
piece of ginger
grated
1-2
tbsp
warm water
1/2
tsp
sea salt
Serve with:
quinoa of brown rice
roasted cashews
chopped cilantro or basil
Instructions
Preheat oven to 400F.
To a bowl, add all ingredients for the savory peanut marinade sauce.
Mix together until very smooth.
To a large baking sheet, place 1 inch thick cabbage "steaks" (should fit about 6 steaks)
Use a pastry bush to bush on the peanut sauce evenly onto each side of the cabbage steaks.
Then bake for 30-35 minutes or until golden brown.
Serve with quinoa or rice and top with roasted cashews, cilantro or basil.
