Roasted Cabbage Steaks with Savory Peanut Sauce (vegan & gluten free)

Ingredients
  

  • 1 savoy cabbage sliced into 1 inch thick pieces

Savory Peanut Sauce Marinade:

  • 1/3 cup peanut butter smooth and unsalted
  • 3 tsp sriracha
  • 2 tbsp coconut aminos
  • 1 tbsp avocado oil
  • 2 tsp coconut sugar
  • 1 inch piece of ginger grated
  • 1-2 tbsp warm water
  • 1/2 tsp sea salt

Serve with:

  • quinoa of brown rice
  • roasted cashews
  • chopped cilantro or basil

Instructions
 

  • Preheat oven to 400F.
  • To a bowl, add all ingredients for the savory peanut marinade sauce.
  • Mix together until very smooth.
  • To a large baking sheet, place 1 inch thick cabbage "steaks" (should fit about 6 steaks)
  • Use a pastry bush to bush on the peanut sauce evenly onto each side of the cabbage steaks.
  • Then bake for 30-35 minutes or until golden brown.
  • Serve with quinoa or rice and top with roasted cashews, cilantro or basil.
