Ingredients
1/2
large red cabbage
1/2
apple
thinly sliced into 1 inch pieces
1/3
cup
lemon juice
3
tsp
olive oil
2
tsp
coconut aminos
1
clove
garlic
minced
1/2
tsp
of sea salt
1
tsp
caraway seeds
1
handful of cilantro
chopped
1/3
cup
roasted cashews
chopped or broken into halves
1
inch
piece of jalapeƱo
minced (or to taste)
1/2
cup
of sauerkraut
optional
Instructions
Thinly slice the cabbage using a a sharp knife or a mandoline slicer (should yield about 4 cups of cabbage).
Thinly slice half an apple and chop into 1 inch bite sized pieces.
Add the cabbage and apples to a large bowl.
Then add in all remaining ingredients (except for roasted cashews) to the bowl and mix to combine thoroughly.
Let it marinate either at room temp or in the refrigerator for at least 2 hours or overnight (this allows it break down and provide a great texture)
Before you're ready to serve, add in roasted cashews (this allows them to stay crunchy and adds nice texture)
Enjoy!
Store in an airtight container for up to 3-5 days refrigerated.
