Vegan Salted Date Caramel

Equipment

  • 1 Blender

Ingredients
  

  • 1 cup dates (madjool and/or blonde dates) pitted
  • 2-3 cups hot water (for soaking) discard before adding to blender
  • 1/4 cup plain dairy free milk I use coconut or oat
  • 1 tbsp cashew butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp flakey salt I used Maldon

Instructions
 

  • Bring 2-3 cups of water to a boil. Into a medium sized bowl, add dates and pout over hot water and soak for about 5 minutes.
  • Drain the water from the dates.
  • Add dates, plant milk, cashew butter, vanilla extract and flakey salt to a blender.
  • Blend until smooth.
  • Store in an airtight container in the fridge for up to a week.
  • Serve with sliced fruit or on ice cream, enjoy!
