Carrot Button Noodles
- 4 small-medium carrots peeled, chopped and steamed
- 3 tbsp water
- 1 cup potato starch (I used Bobs Red Mill)
Chili Garlic Sauce
- 3 tsp avocado oil
- 3 cloves garlic minced (keep some pieces chunkier for texture)
- 1 tsp gochugaru
- 3 tbsp coconut aminos
- 1 tsp maple syrup
- 1/4 tsp sea salt
Make the Dough:
Steam the chopped carrots until tender. Blend the steamed carrots with some water into a smooth purée, I use a Magic Bullet blender. Gradually mix in potato starch until a soft, pliable dough forms. Add a little more potato starch if needed.
Prepare the Sauce:
Heat avocado oil in a pan, add garlic, and sauté until fragrant. Stir in gochugaru, coconut aminos, maple syrup, and sea salt. Cook for 1-2 minutes.
