This is Part 2 of my Overnight Oats series because preparing overnight oats in advance is an incredibly convenient way to streamline your mornings into something delicious!
Allow me to introduce, Mango Milk.
We’ve all had flavors of milk like strawberry or chocolate, but what about mango?
I created what I like to call mango milk for this recipe and it is truly a revelation. It’s so yummy, flavorful and no sugar needed!
The sweetness of the ripe mango adds a natural sweetness to this recipe so I don’t use any additional sweetness in this recipe. Just 100% minimal, whole food ingredients.
I love adding chia seeds to this recipe because it’s sort of like the best of both worlds. Overnights oats and chia seed pudding!
When chia seeds are mixed in with the mango milk it allows the chia seeds to gelatinize.
This means they unlock even more of their superfood nutritional benefits. One being that they are incredible for digestion and a great brain health food!
That’s why I love to add them to my morning breakfasts to start my day off on a great note. 🙂

Vibrant Mango Lime Chia Seed Overnight Oats (Vegan & Gluten Free Breakfast)
Ingredients
Overnight Oat/Chia Seed Ingredients:
- 3/4 cup organic rolled oats gluten free
- 1 tbsp chia seeds
Mango Milk:
- 1/2 mango for milk
- 1/4 tsp Lime zest
- 1 cup full fat coconut milk
- 1/8 tsp turmeric
Toppings:
- 1/2 Mango, diced
- 1 tbsp shredded coconut
- lime zest
Instructions
Make your mango milk:
- To a personal blender, combine dairy free milk, mango, lime zest and turmeric and blend until very smooth.
Assemble your overnight oats:
- To your jar, add rolled oats, chia seeds and mango milk and mix until well combined.
- Topped with diced mango, shredded coconut and lime zest.
- Refrigerate overnight or for at least 30 minutes before enjoying!
