This nutritious twist on the classic dessert combines the flavors of fresh strawberries and mimics a fluffy shortcake flavor in a convenient and healthy breakfast option.
This easy meal prep recipe will have you eagerly waking up to enjoy in the morning.
Strawberry shortcake is such a light yet comforting dessert so it really works perfectly when turned into a breakfast.
Who would have thunk years ago you could turn your morning oats into something like this? Thankfully, you can have you cake (made of oats) and eat it too! 🙂
Vegan and Gluten-Free Strawberry Shortcake Overnight Oats
Ingredients
- 1 cup organic rolled oats gluten free
- 1 tbsp chia seeds
- 1 cup dairy free milk
- 1 tbsp maple syrup adjust according to desired sweetness level
- 1 tsp vanilla extract
- 1 tbsp strawberry jam optional: adds to the strawberry flavor
- 1 tsp pitaya powder optional: makes it pink, adds some sweetness and nutritional benefits
- Toppings:
- 5-6 strawberries, diced adding a squeeze of lemon juice will keep them fresher
- 1/3 cup dairy free vanilla yogurt
- slivered almonds
Instructions
Make the overnight oats:
- To your jar, add rolled oats, chia seeds, dairy free milk, maple syrup, vanilla, pitaya powder and strawberry jam and mix until very well combined.
Add your toppings:
- Top with a layer of diced strawberries, dairy free vanilla yogurt and slivered almonds or crispy rice cereal on top.
- Refrigerate overnight or for at least 30 minutes before enjoying!
