This turmeric quinoa with dates and roasted cashews is the perfect side dish!

This recipe only takes 20 minutes to make, has a ton of flavor and health benefits!
How to Make the Perfect Quinoa, every time.

Start by adding your white quinoa and broth to a pot. In this case, also adding in some turmeric.

I personally like to use vegetable broth and usually do 1/2 veggie broth, 1/2 water but you can also make it with just all veggie broth.

Mix together and bring to a boil, leaving the lid on.

Once it begins to boil, reduce to the lowest simmer (be sure NOT to remove the lid) you want to keep all the steam in the pot.

Simmer for 20 minutes with the lid on.

Then turn off the heat and use a fork to fluff the quinoa.

One the quinoa is cooked, you can add in your pitted and chopped medjool dates and roasted cashews. I like these dry roasted cashews because they aren’t made with any canola oil. I definitely recommend looking out for any seed oils when buying nuts and seeds. I also choose unsalted cashews in this recipe but salted can still work just don’t add any additional salt.
Turmeric Quinoa with Dates and Roasted Cashews
Ingredients
- 1 cup quinoa
- 1 cup veggie broth
- 1 cup water or more veggie broth
- 1/2 tsp turmeric
- 8 medjool dates pitted and chopped
- 1/2 cup roasted cashews
Instructions
- Add quinoa, veggie broth, water and turmeric to a pot and cover with lid.
- Bring to a boil, then immediately reduce to a simmer (keeping the lid on) and cook for 20 minutes.
- Then remove the lid and use a spoon or fork to fluff.
- Chop dates (pit if not already pitted) and add to quinoa with roasted cashews and mix until well combined.
- Enjoy!
