Ingredients you need to make this Healthy Vegan Persian Shirazi Salad Recipe:
Roma tomatoes
Persian cucumbers
Red Onion
Flat Leaf Parlsey
Mint
Lemon Juice
Extra Virgin Olive oil
Sea salt (I use Celtic sea salt for extra minerals and flavor)
Hemp Seeds (optional)
Tips and Tricks on making the BEST Healthy Vegan Persian Shirazi Salad Recipe:
As mentioned, the quality of ingredients here is very important. Fresh ripe tomatoes are great for this dish, that’s why its a Spring and Summer favorite when tomatoes are at their peak.
Using ingredients with less water in this recipe is actually really key to the texture of the recipe.
That’s why I choose Roma tomatoes and Persian cucumbers when possible, these absorb the salt and still create a yummy liquid in the salad. Yet still hold their shape when diced. However, any tomato or cucumber will still work in this recipe.
There are different variations of the shirazi salad out there but I like the classic combo of adding fresh herbs of parsley and mint and a simple lemon, olive oil and sea salt dressing.
It may seem really simple but the flavors just really come together and it’s one of those recipes you wanna keep eating!
The liquid in this recipe is perfect for soaking up some bread and many people (including myself) have been knowing to drink some of the remaining juices-or use it to top on rice or quinoa!
Shirazi Salad: A Healthy Vegan Persian recipe
Ingredients
- 4 roma tomatoes, finely diced
- 4 Persian cucumbers, finely diced
- 1/2 large red onion, finely diced add more if you like more onion
- 1/4 cup flat leaf parsley, finely chopped
- 1/4 cup mint, finely chopped
- 1 tbsp hemp seeds optional
Dressing Ingredients
- 1 lemon, juiced
- 2-3 tsp olive oil extra virgin
- 1/2 tsp sea salt I used Celtic Sea salt
Instructions
- Wash the cucumbers and tomatoes thoroughly.
- Trim the ends of the cucumbers and cut them into small, even-sized dice. Trim off the top of the tomato and finely dice them.
- Peel and finely chop the red onion. Chop the fresh mint and parsley leaves.
- Combine the cucumbers, tomatoes, red onion, chopped mint, and parsley and hemp seeds to a large bowl.
- Top with lemon juice, sea salt and extra virgin olive oil.
- Mix all ingredients together until well combined.
- Place the salad in the refrigerator for at least 15-30 minutes to allow the flavors to meld and the salad to chill.
- Serve as a refreshing side dish alongside your favorite meals, with quinoa or enjoy it as a light and healthy snack with bread, chips or by itself.
