Roasted Cabbage Steaks with Savory Peanut Sauce (vegan & gluten free)
Ingredients
- 1 savoy cabbage sliced into 1 inch thick pieces
Savory Peanut Sauce Marinade:
- 1/3 cup peanut butter smooth and unsalted
- 3 tsp sriracha
- 2 tbsp coconut aminos
- 1 tbsp avocado oil
- 2 tsp coconut sugar
- 1 inch piece of ginger grated
- 1-2 tbsp warm water
- 1/2 tsp sea salt
Serve with:
- quinoa of brown rice
- roasted cashews
- chopped cilantro or basil
Instructions
- Preheat oven to 400F.
- To a bowl, add all ingredients for the savory peanut marinade sauce.
- Mix together until very smooth.
- To a large baking sheet, place 1 inch thick cabbage "steaks" (should fit about 6 steaks)
- Use a pastry bush to bush on the peanut sauce evenly onto each side of the cabbage steaks.
- Then bake for 30-35 minutes or until golden brown.
- Serve with quinoa or rice and top with roasted cashews, cilantro or basil.
