These Lions Mane Steaks with Chimichurri is one of the most mind blowing plant based recipes I’ve made.
When it comes to trying to emulate taste and texture of meat, while using real food ingredients- nothing comes close to mushrooms and fungi! They are truly one of the nature’s most amazing gifts.
They are packed with so many incredible health benefits and can be transformed to taste better than any grilled chicken recipe I’ve ever had.
As most people go vegan and plant based because they care about animals, the environment and/or health reasons but not because they didn’t enjoy the taste of traditional recipes using animal products.
This is where I feel the future of plant based cooking lies, with recipes like this where you truly can’t tell the difference.
Step 1: Make your delicious Chimichurri sauce and set aside.
Step 2: Start by cooking it down in a pan or cast iron skillet with some avocado oil on medium heat. Using tongs to flip.
Step 3: Press it down, using the back of a plate or cast iron press to get it to a about a 1-2 inch thick “steak”.
Step 4: Marinate your mushrooms in your marinade for 15-20 minutes (recipe below in recipe box).
Step 5: Place marinated mushroom “steaks” onto a pan or cast iron skillet on medium-high heat with some avocado oil and cook on each side for about 5 minutes or until thoroughly cooked.

Where to get Lion’s Mane Mushrooms
Lion’s Mane mushrooms are more available than ever. So many farmers are now growing them which is amazing. Many local farmers markets carry these and a wide variety of mushrooms.
Grocery and health food stores like Whole Foods are now carrying these, typically you’ll find them in a box in the produce section.

Lions Mane Mushroom Steaks with Chimichurri
Ingredients
- 2 Lions mane mushrooms
Marinade:
- 2 tbsp coconut aminos
- 2-3 tbsp avocado oil more for cooking
- 2 tsp paprika
- 1 tsp garlic powder
- 2 tsp coconut sugar
- 1 tsp flakey salt sub 1/2 tsp sea salt
- 1/2 tsp chili flakes
Chimichurri:
- 1 cup flat leaf parsley about 1 handful finely chopped
- 2 tbsp fresh oregano chopped
- 3 shallots or 1/4 cup red onion minced
- 2 tbsp olive oil extra virgin
- 1 garlic clove minced
- 1 lemon juiced
- 1/4 tsp sea salt
- 1 tsp apple cider vinegar sub extra lemon juice
- 1/2 tsp chili flakes adjust based on desired spice level
Instructions
- Start by making your Chimichurri by adding all the ingredients into a bowl and mix together, then set aside.
- Combine the marinade ingredients into a bowl or medium sized glass container, mix until well combined and set aside.
- Then heat a skillet or pan on low-medium heat. (I like to use a cast iron or nonstick ceramic for this.)
- Add a few teaspoons of avocado oil and your lions mane mushroom.
- Use tongs to press down on it and let it cook for a few minutes. Use the back of plate (the heavier the better) to press down the mushroom. Then flipping on each side for several minutes until it’s pressed down into a flat steak. Add more avocado oil if needed.
- Repeat the process with the other lions mane mushroom until you have two “steak like” pieces. Then place your lion mane "steaks" into the marinade container (one at a time, depending on the size of your mushrooms and container) spoon on the marinade to coat it on each side. If using a container, close the lid and shake up the marinade until it’s well coated. Let mushrooms marinate for about 15-20 minutes.
- Heat the skillet on medium heat and add a few more tsp of avocado oil.
- Then add the mushroom steaks back into the skillet.
- Add in any remaining marinate marinate and a little oil if needed.
- Cook on each side for about 5 minutes on each side, using tongs to flip and use the back of the plate for a few minutes on each side. Once thoroughly cooked remove and plate.
- Top with Chimichurri sauce and enjoy!
- I like to serve with quinoa to complete the meal and add protein.

I bought some lions mane for the first time and was looking for a good marinade base to build on. I used this one plus added oregano white pepper onion powder and Worcestershire. Instead of topping with chimichurri I topped it with chive butter. It was mind blowing and if I ordered this at a restaurant I’d come back over and over just for this. It tasted just like those delicious little steak samples they’ll hand out at the mall Chinese spot. Definitely will be making this again probably for guests to impress
