This gut healing hot pink cabbage slaw is one my favorite recipes that I love to pair with all types of dishes!
It’s flavorful and delicious as well as being so beneficial to your gut health and is overall immune-boosting.
I love using this in different recipes and especially for a taco night when I have people over because everyone loves the color it adds to the food!
I love this recipe because it uses really affordable ingredients that have incredible health benefits and turns into something so flavorful and versatile.
I originally made this recipe many years ago and adapted it over the years and made a few different variations.
It’s been one of my go-to’s to have on hand and every time friends and family try it they ask for the recipe! So here it is! 🙂
Ingredients you need to make this Gut Healing Hot Pink Cabbage Slaw:

red cabbage

apple
-
lemon juice
-
cilantro
-
garlic
-
coconut aminos
-
olive oil
-
sea salt (I love to use Celtic sea salt or good quality sea salt for this)

jalapeño
-
dry roasted cashews
-
sauerkraut (optional but added great flavor and heath benefits)
HOW TO MAKE IT:
The best way to make a great cabbage slaw is by thinly slicing it. I recommend using a mandoline slicer if possible. I’ve been using my benriner for years and love it.
Alternatively, you can use a sharp knife to thinly slice these ingredients.
After you’ve combined all the ingredients, allowing the slaw to sit for a few hours or overnight really makes a difference in how much it softens up. It sort of begins to have a fermenting effect making the flavors really stand out.
If you don’t have time, I still make this sometimes 20-30 minutes before eating. Just mix it really well before letting it sit. You can also add 1 tsp of apple cider vinegar which will speed up the process and give it that hot pink color.

I always make this gut healing hot pink cabbage slaw in advance when I can.
This allows all the flavors to combine and the cabbage to soften, making it easier to digest.
The jalapeno in this dish really adds great flavor (as well as being anti-inflammatory) and usually they are not very spicy but you can de-seed or omit if needed.
I love to add this slaw in my Rainbow Onigirazu Sushi Sandwich as well!
I love adding this to tacos as I mentioned but it is SO versatile.
You can add this slaw to salads, tacos burgers, my “chicken” and waffle sandwich or simply snacking with chips!
Gut Healing Hot Pink Cabbage Slaw
Ingredients
- 1/2 large red cabbage
- 1/2 apple thinly sliced into 1 inch pieces
- 1/3 cup lemon juice
- 3 tsp olive oil
- 2 tsp coconut aminos
- 1 clove garlic minced
- 1/2 tsp of sea salt
- 1 tsp caraway seeds
- 1 handful of cilantro chopped
- 1/3 cup roasted cashews chopped or broken into halves
- 1 inch piece of jalapeño minced (or to taste)
- 1/2 cup of sauerkraut optional
Instructions
- Thinly slice the cabbage using a a sharp knife or a mandoline slicer (should yield about 4 cups of cabbage).
- Thinly slice half an apple and chop into 1 inch bite sized pieces.
- Add the cabbage and apples to a large bowl.
- Then add in all remaining ingredients (except for roasted cashews) to the bowl and mix to combine thoroughly.
- Let it marinate either at room temp or in the refrigerator for at least 2 hours or overnight (this allows it break down and provide a great texture)
- Before you're ready to serve, add in roasted cashews (this allows them to stay crunchy and adds nice texture)
- Enjoy!
- Store in an airtight container for up to 3-5 days refrigerated.

Shouldn’t the 1 tsp apple cider vinegar be included in the recipe and ingredients, or as a quick-fix option? After all, that hot pink color it produces is what makes the salad hot pink, right? I’m just thinking some people might not read the whole article, and thus miss out on adding the color effect they wanted…?

Hi Jean! No the hot pink color will still be produced with the lemon and salt and refrigeration. Apple cider vinegar can be used if needed or instead 🙂 Hope you enjoy the recipe and color if you make it.
