I truly live for potatoes. I love any and all potato recipes and this one is one of my absolute favorites which I think is saying a lot. Everything bagel meets perfect potato latkes. Need I say more?
I have ceramic doughnut mold I got a while back from Green Life. I have yet to make doughnuts, the first thing that occurred to me was to make bagels and then one day I was making latkes and decided to try them in the mold and they were incredibly perfect! They have crispy exterior with the soft interior, similar to a tradition latke but using far less oil as they are baked.
Potatoes are not only delicious but they are great for you! They contain lysine, making them anti-viral and a great food for the immune system especially in colder months.
The Everything But The Bagel seasoning I used from Trader Joe’s works perfectly with these. I added scallions inside the latke bagels so this really is the best of both worlds when I think of my favorite New York bagel and my favorite homemade latkes.
Personally, I love applesauce with my latkes. But with a kick. It’s sweet and slightly spicy with a touch of cayenne. Now I can’t eat applesauce any other way, it just works and pairs beautiful with the latke bagels!
- Bagel Latkes:
- 2 russet potatoes, peeled and grated
- 1½ tbs arrowroot starch
- ¼ tsp sea salt
- ½ tsp garlic powder
- ½ tsp onion powder
- 2 scallions, chopped
- ½ cup orange bell pepper, minced
- Everything bagel seasoning (about 2 tbs)
- Spiced Apple Sauce:
- 2 apples, chopped into 1 in. pieces (I used ambrosia)
- 1½ cup water
- ¼ tsp cinnamon
- ⅛ tsp cayenne
- Instructions:
- Preheat oven to 425F.
- In a large bowl, use a box grater (the larger holes) to grate 2 peeled potatoes.
- Add arrowroot starch, garlic powder, onion powder, sea salt, bell pepper and scallions to the bowl and mix with a spoon until well combined.
- Then into a doughnut/bagel mold, brush of spray avocado oil into the crevices and sprinkle in Everything bagel seasoning into the moulds and form 6 potato bagels.
- Alternatively, you can also just form them into regular circle latke shapes onto a baking sheet if you don’t have a doughnut mold.
- Top with more Everything Bagel Seasoning.
- Spray with avocado oil and bake for 25 minutes.
- For the apple sauce, combine all ingredients into a pot, cover and bring to a boil, reduce to a low simmer for 20-30 mins. Then mash with a potato mashed or large fork and simmer for another 5 minutes. Take it off the heat and allow to cool for a few minutes.
- Place applesauce into a handheld blender or food processor to blend just for 15-30 seconds.
- I like to keep some texture in the applesauce.
- Plate and enjoy!
Not only are they great served with the applesauce but they are so versatile. You can serve with vegan sour cream and chives or eat like you would a bagel and heat them up with some vegan cream cheese. Anyway you eat these everything latke bagels, I promise they are delicious!
