- 4 small-medium carrots peeled, chopped and steamed
- 3 tbsp water
- 1 cup potato starch (I used Bobs Red Mill)
Chili Garlic Sauce
- 3 tsp avocado oil
- 3 cloves garlic minced (keep some pieces chunkier for texture)
- 1 tsp gochugaru
- 3 tbsp coconut aminos
- 1 tsp maple syrup
- 1/4 tsp sea salt
Instructions
Make the Dough:
- Steam the chopped carrots until tender. Blend the steamed carrots with some water into a smooth purée, I use a Magic Bullet blender. Gradually mix in potato starch until a soft, pliable dough forms. Add a little more potato starch if needed.
Shape the Noodles:
- Roll the dough into small balls with about 1 tbsp of dough, then gently flatten them to create button shapes.
Cook the Noodles:
- Boil in salted water for about 5 minutes, then drain and set aside.
