Summer calls for my favorite 10 Minute Vegan Cold Sesame Noodles recipe!
I actually meal prep this recipe often because it’s so good chilled and I crave something light and delicious in summer. You can eat it warm or room too if you prefer 🙂
Recently, I was desperate for a quick, refreshing meal that wouldn’t heat up my kitchen by turning on the oven.
After some experimenting, I came up with these cold sesame noodles, and now I’m totally hooked!
They’re vegan, gluten free and perfect for meal prep. Plus, the ingredients help balance hormones, making this dish both tasty and good for you.
It’s become my go-to summer meal—easy, delicious, and super satisfying. I can’t wait for you to try it!
Ingredients Needed To Make These 10 Minute Vegan Cold Sesame Noodles
Creamy Sesame Sauce:

Tahini (sub peanut butter)

Coconut aminos

Toasted sesame oil

Vegetables:

The Miracle Noodle You NEED T0 Try
This recipe is made using yam noodles. They are a Japanese noodle also known as Shirataki noodles or konjac noodles.
They are a very nutritious and low calorie noodle option being that they are made only of a root vegetable, also making them naturally vegan and gluten free!
There is even a brand that carries these called Miracle Noodles, because they really are! You can find these at Japanese markets, health stores and I often get them online as well.

10 Minute Vegan Cold Sesame Noodles
Ingredients
Creamy Sesame Sauce:
- 1/4 cup tahini
- 1 tbsp coconut amino
- 1/4 inch piece of ginger grated (optional)
- 1/2 tsp toasted sesame oil
- 1 tsp maple syrup
- 1/4 lime juiced
- 1/4 tsp sea salt
- 2 tbsp water
- 2 tsp sesame seeds and
Vegetables:
- 2 green onion chopped
- 1 cup cabbage thinly sliced
- 1 large carrot shredded
- 3 Persian cucumbers thinly sliced
Additional Ingredients:
- 1 bag of sweet potato noodles or about 8 oz
Instructions
Prepare the Noodles:
- Cook the sweet potato noodles according to the package instructions. Once cooked, drain and rinse under cold water to cool them down quickly. Set aside.
Make the Creamy Sesame Sauce:
- In a bowl, combine the tahini, coconut aminos, grated ginger (if using), toasted sesame oil, lime juice, sea salt, and water. Whisk until smooth and creamy. Adjust the consistency with more water if needed.
Prepare the Vegetables:
- Chop the green onions, thinly slice the cabbage, shred the carrot, and thinly slice the Persian cucumbers.
Assemble the Noodles:
- In a large mixing bowl, combine the cooked sweet potato noodles, chopped green onions, sliced cabbage, shredded carrot, and sliced cucumbers.
- Pour the creamy sesame sauce over the noodles and vegetables. Toss everything together until well coated.
Serve:
- Transfer the sesame noodles to serving bowls. Sprinkle with sesame seeds for extra crunch and garnish. Enjoy!
