Turmeric Quinoa with Dates and Roasted Cashews

Ingredients

quinoa
1
cup
veggie broth
1
cup
water
or more veggie broth
1/2
tsp
turmeric
8
medjool dates
pitted and chopped
1/2
cup
roasted cashews
Instructions
Add quinoa, veggie broth, water and turmeric to a pot and cover with lid.
Bring to a boil, then immediately reduce to a simmer (keeping the lid on) and cook for 20 minutes.
Then remove the lid and use a spoon or fork to fluff.
Chop dates (pit if not already pitted) and add to quinoa with roasted cashews and mix until well combined.
