Turmeric Quinoa with Dates and Roasted Cashews

Ingredients
  

  • 1 cup quinoa
  • 1 cup veggie broth
  • 1 cup water or more veggie broth
  • 1/2 tsp turmeric
  • 8 medjool dates pitted and chopped
  • 1/2 cup roasted cashews

Instructions
 

  • Add quinoa, veggie broth, water and turmeric to a pot and cover with lid.
  • Bring to a boil, then immediately reduce to a simmer (keeping the lid on) and cook for 20 minutes.
  • Then remove the lid and use a spoon or fork to fluff.
  • Chop dates (pit if not already pitted) and add to quinoa with roasted cashews and mix until well combined.
  • Enjoy!
