2tbspgochujang (korean chili paste)make sure you get vegan, gluten free- brand used linked above
2tbsptahini
1lime, juiced
1tbsppure maple syrup
1tbspcoconut aminoscan sub 1/2 tbsp tamari or soy sauce if not gluten free
1/4tspsea salt
1/2piece ginger, peeled and grated
Remaining Ingredients:
2dried ramen noodlesI used gluten free, linked above
Optional Toppings:
small handfulcilantro or green onion, chopped
sesame seeds
lime wedges
Instructions
Bring a pot of water to a boil.
While you do that add all your "Gochujang Tahini Sauce" ingredients to a bowl and mix together until smooth.
Cook ramen noodles according to package instructions, usually for about 4-5 minutes.
Strain the noodles and place them back into the pot and pour the sauce over the noodles. On a low to medium heat, mix together until the noodles are well coated.
Once the noodles are warm, add them to a bowl with any toppings you like and enjoy!
