5 Minute Gochujang Tahini Noodles

Ingredients
  

Gochujang Tahini Sauce

  • 2 tbsp gochujang (korean chili paste) make sure you get vegan, gluten free- brand used linked above
  • 2 tbsp tahini
  • 1 lime, juiced
  • 1 tbsp pure maple syrup
  • 1 tbsp coconut aminos can sub 1/2 tbsp tamari or soy sauce if not gluten free
  • 1/4 tsp sea salt
  • 1/2 piece ginger, peeled and grated

Remaining Ingredients:

  • 2 dried ramen noodles I used gluten free, linked above

Optional Toppings:

  • small handful cilantro or green onion, chopped
  • sesame seeds
  • lime wedges

Instructions
 

  • Bring a pot of water to a boil.
  • While you do that add all your "Gochujang Tahini Sauce" ingredients to a bowl and mix together until smooth.
  • Cook ramen noodles according to package instructions, usually for about 4-5 minutes.
  • Strain the noodles and place them back into the pot and pour the sauce over the noodles. On a low to medium heat, mix together until the noodles are well coated.
  • Once the noodles are warm, add them to a bowl with any toppings you like and enjoy!
