Low Waste Strawberry Top Vinaigrette

Ingredients
  

  • 1 cup strawberry tops
  • 1/2 lemon, juiced
  • 3 tsp balsamic vinegar
  • 3 tsp maple syrup
  • 3 tsp olive oil extra virgin
  • sea salt and pepper, to taste

Instructions
 

  • To a clean container or mason jar, add all your ingredients.
  • Use the back of a spoon to gentle press down for about a minute on the strawberry tops (this allows some of the juice from the strawberry to be released)
  • Close the lid and shake it up.
  • Enjoy the vinaigrette immediately on a salad or refrigerate overnight (or for 24 hours).
  • Once refrigerated the strawberry tops will change their taste and texture and are an absolutely delicious addition to your salad, etc!
