Cowgirl Caviar (an upgraded cowboy caviar)

Ingredients
  

  • 1 15 oz can black beans, rinsed and drained
  • 2 cups bell pepper, diced red, orange, yellow or a mixture
  • 1-1 1/2 alphonso mango, diced sub any other mango variety
  • 1 avocado, diced
  • 1 cup red onion, diced
  • 1/2 cup roasted cashews, chopped
  • 1/2 cup cilantro, chopped
  • 1 jalapeño, seeded and minced optional but recommend!

Creamy Chili Lime Dressing

  • 1/4 cup lime juice
  • 1 tbsp maple syrup
  • 3 tsp chili powder
  • 1 tsp flakey salt sub 1/2 tsp sea salt
  • 2 tbsp dairy free cream cheese

Instructions
 

  • To a large bowl, add in to rinsed and drained black beans, diced bell pepper, mango, red onion, avocado, cashews, jalapeño and cilantro.
  • To a personal blender, add in all ingredients for the "creamy chili lime dressing" and blend until smooth. Alternatively, add to a bowl and mix until completely smooth.
  • Add dressing to the bowl of "cowgirl caviar" and combined until well mixed.
  • Enjoy with chips, quinoa or rice!
