They say there’s two types of people. People who love ranch dressing or blue cheese. And I have always been a ranch girl!Â
Dip it with veggies, wings, on pizza, use as a salad dressing… the list goes on!
It’s such a savory and versatile dressing!  What’s better than ranch dressing? Elevating it with one of my favorite healing herbs, cilantro!Â
This creamy savory dressing is easy to make and you won’t be believe how healthy it actually is!
The Key to Dairy Free Creaminess
I used cashews as a base for this recipe which creates a creamy texture without the dairy. Â Adding spices, lemon juice, stoneground mustard and herbs to create the flavors of ranch but so much fresher!
I use a Vitamix blender to create an incredibly velvety texture in minutes. Â You can still make this creamy cilantro dressing without a high speed blender.
Place your cashew into a medium sized bowl.
Bring a few cups of water to a boil and pour the water over the cashews.
Leave to soak for 20-30 minutes. Â Drain the soaking water before blending. Â You can also soak overnight in room temperature water. Â This will allow the cashews to become softer and easier to blend.
Creating an Incredibly Unique Ranch Dressing
This cilantro ranch dressing is so tasty and unique!
Cilantro is a favorite herb of mine. Â It really elevates the flavors of ranch dressing. Â However if you don’t like the taste of cilantro, no problem, you can substitute it for parsley!
I made this specifically to pair with my vegan buffalo tacos! Â It is absolutely delicious together!
Vegan Cilantro Ranch Dressing
Ingredients
- 2/3 cup cashews I used unsalted roasted but you can use raw as well
- 1 cup water
- 1 tbsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp coconut aminos
- 1 tsp maple syrup
- 1 tsp stoneground mustard
- 1/4 tsp sea salt
- 1/4 cup dill fresh (you can sub with 2 tsp dried dill)
- 1/4 cup chives
- 1 small handful cilantro can sub with parsley or extra dill
Instructions
- To a high speed blender, add your ingredients and blend until smooth.
- If you aren't using a high speed blender, soak your cashews in hot water for 20-30 minutes prior. Drain the soaking liquid before adding to the blender and blend until smooth.
- Store in an airtight container refridgerated for up to 3 days.
