This roasted mango salsa is an absolute game changer! It’s so fresh and the perfect mixture of sweet and savory, an absolute favorite dip for the summer!
Mango is one of my favorite fruits to enjoy raw. However roasted and grilled mango creates even more delicious depth of flavor making it perfect in salsa.
This recipe is easy to make, simply placing the ingredients onto one sheet pan and roasting.
Ingredients Needed:
Mango
Tomatoes
White onion
Red bell pepper
Jalapeno
Cilantro
Lime + orange juice
Organic Chili Powder
Avocado Oil
Flakey Maldon Salt
Then add the roasted ingredients to a blender with the remaining ingredients and you have incredible homemade salsa to last for the week!
For this recipe and many of my recipes I use a high speed blender, this Vitamix blender is the one I’ve seen using for the last 7 years and highly recommend if you’re looking for one. It creates the perfect texture.
This salsa is wonderful paired simply paired with chips. I love grain free Siete chips!
This salsa pairs really well as a sauce on my Cauliflower Steaks, I like to add it on top and cook for a few more minutes before serving and I also love it paired with quinoa salads like this Quinoa Tabbouleh salad!
The Best Roasted Mango Salsa
Ingredients
Ingredients to Roast
- 1 mango, chopped into several pieces
- 1/2 red bell pepper, halved core and stem removed
- 4-5 vine ripen tomatoes, cut in half
- 1 small white onion, halved
- 1 large jalapeno pepper, halved deseed to remove heat (leave a little in for some spice, this vary depending on the ripeness of the jalapeño)
- 1 tbsp avocado oil
- 1/2 tsp sea salt or flakey salt
Ingredients to add to blender after roasting
- 2 limes, juice
- 1/2 orange, juiced
- 2 tsp chili powder
- 1/2 cup cilantro
- 1/2 tsp flakey salt
Optional
- 1/2 mango, finely diced
Instructions
- Preheat oven to 425F.
- Onto a baking sheet lined with parchment paper, add tomatoes, mango, onion, red bell pepper, jalapeño, avocado oil and flakey salt. Use your hands to rub the avocado oil on.
- Bake for 25 minutes.
- Place roasted ingredients into a blender. Add in lime juice, orange juice, chili powder, cilantro, flakey salt and blend until texture it slightly chunky.
- Place into a serving bowl. Optionally, add in 1/2 finely diced mango and mix.
- Serve with chips and enjoy!
