Eating Food Waste?
First things first, strawberry tops are completely edible, although we don’t often eat them.
They don’t offer much flavor so when preparing strawberries, they are usually consumed in sweet desserts. So it makes sense that we would discard the tops.
But wait…we can turn them into a vinaigrette!
By adding vinegar and acidity from lemon juice, it pulls out the strawberry essence from the strawberry tops. This recipe however takes it one step further!
By storing this low waste strawberry top vinaigrette recipe in the refrigerator for at least 12-24 hours it is essentially pickling the strawberry tops. This adds all the flavor to the strawberry tops themselves, transforming the texture and making them much more palatable and yummy to consume!

How should I store this recipe?
Store in a glass airtight container, refrigerated for up to 3-5 days.
Can I substitute the balsamic vinegar in this recipe?
Yes, you could substitute for another type of vinegar like apple cider vinegar. It will have a different flavor but will still be similar in taste. To have the pickling effect on the strawberry tops, you will need to include at least some vinegar in the recipe.
Does this work with other fruit?
Since strawberries are the only berry that comes with a stem, it is the only one I have tried but you could try this method with another fruit! Fruits that goes well with balsamic vinegar are berries, peaches, figs and cherries!
Low Waste Strawberry Top Vinaigrette
Ingredients
- 1 cup strawberry tops
- 1/2 lemon, juiced
- 3 tsp balsamic vinegar
- 3 tsp maple syrup
- 3 tsp olive oil extra virgin
- sea salt and pepper, to taste
Instructions
- To a clean container or mason jar, add all your ingredients.
- Use the back of a spoon to gentle press down for about a minute on the strawberry tops (this allows some of the juice from the strawberry to be released)
- Close the lid and shake it up.
- Enjoy the vinaigrette immediately on a salad or refrigerate overnight (or for 24 hours).
- Once refrigerated the strawberry tops will change their taste and texture and are an absolutely delicious addition to your salad, etc!
