Baked Sweet Potato Fries with Jalapeno Avocado Dip

Baked sweet potato fries with lots of flavor, paired with a spicy dip full of good fats.

Ingredients
  • 3 medium Sweet Potatoes (washed, peeled and cut into 1 in. thick wedges)
  • 1 tsp dried garlic
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1 tsp dried oregano
  • 2 tbs of Avocado Oil
  • 1 Avocado
  • Juice of 2 small Lemons
  • 1 tsp Jalapeno (minced- more if you want more heat)
  • 1 clove of Garlic (minced)
  • 1 tbs Olive oil
  • sea salt to taste
Instructions
  1. In a large bowl mix together Avocado oil, dried garlic, smoked paprika, sea salt and dried oregano. Mix and add in cut sweet potatoes.
  2. Mix together and place on a baking sheet with a piece of parchment paper.
  3. Turn oven onto 425 degrees F.
  4. Bake for 20 minutes then flip the sweet potatoes over.
  5. Bake for another 25-30 mins or until desired crispiness.
  6. While the sweet potatoes are baking, make your dip.
  7. In a small bowl mash one avocado until smooth.
  8. Add olive oil, minced garlic, jalapeno, lemon juice and salt and mix together.
  9. Serve together and enjoy!
