Vegan Garlic Chive Mashed Potatoes

Ingredients
  • 8-10 yukon gold potatoes, peeled and diced
  • 3 cups vegetable broth
  • 3 garlic cloves, peeled
  • 1½ tbs of chives, minced
  • ½ tsp sea salt
  • ¼ tsp pepper
  • ⅓ cup almond milk
  • ⅓ cup reserved water from boiling potatoes
  • 1 tbs vegan butter (miyokos creamery brand)
  • 2 tbs vegan cream cheese
Instructions
  1. Bring a pot of water and 3 cups of veggie broth with a pinch of salt to a boil.
  2. Add in 3 garlic cloves and the potatoes to the water.
  3. Boil for 12-15 mins or until potatoes are very tender.
  4. Add them to a bowl with remaining ingredients and mashed with a potato masher.
  5. Once mashed and fluffy, use a spoon to mix them up.
  6. Serve and top with extra minced chives, vegan butter and fresh pepper.
  7. Enjoy!
