Cinnamon Sugar Roasted Sweet Potatoes

- 3 small garnet yams (sweet potatoes), peeled and diced into 1 in. cubes
- ½ tsp cinnamon
- 1½ tbs coconut sugar
- 3 tsp coconut oil (melted)
- ⅛ flakey salt (optional)
- Peel and dice sweet potatoes into 1 in. pieces and place into a steamer.
- Bring a steamer pot to a boil and steam the potatoes for 5 minutes.
- Into a medium size bowl, add in all ingredients, except for the flakey salt.
- Mix together until all sweet potato cubes are well coasted.
- Add them to a baking sheet lined with parchment paper and spread them out evenly.
- Bake at 400F for 15 minutes, then remove and flip or toss potatoes.
- Add them back into the oven for an addition 20 minutes.
- Remove from the oven and add flakey salt (optional) or a little extra sprinkling of cinnamon and sugar.
- Enjoy!
