Ingredients
  • 1 medium banna, mashed
  • ¾ cup finely shredded coconut ( I used Let's Do Organic brand)
  • ¼ cup melted chocolate ( I used a Better Carob bar, a chocolate alternative made of carob)
  • Optional: A dash of cinnamon and/or sea salt
Instructions
  1. In a bowl, mash the banana until very smooth.
  2. Add in your coconut and an additional add ins like cinnamon or sea salt.
  3. Mix until well combined.
  4. Form 5 cookies and press them down on a baking sheet lined with parchment paper.
  5. Bake at 375F for 20 minutes.
  6. Cool completely, pop in the fridge or freezer for several minutes to quicken the process.
  7. In a sauté pan melt your chocolate (or carob) of choice.
  8. Using a spoon, drizzle the chocolate onto the cookies and pop into the freezer to allow the chocolate to solidify.
  9. Store in the fridge in an airtight container.
  10. Enjoy!
