This Creamy Raspberry Vinaigrette is out of this world delicious!! It provides so much flavor to salads.
I added it to my Barbie themed Hot Pink Kale Quinoa Salad and it was phenomenal.
This creamy raspberry vinaigrette has the perfect balance of flavors from sweet to a little tangy. The perfect summer vinaigrette!
The mixture of the fresh raspberries with yogurt and a little acidity makes for the most beautiful pink color.
What you need for this Delicious Creamy Raspberry Vinaigrette:
Raspberries
Plain diary free yogurt (I used this cocojune one and I find it lends itself really well sweet and savory recipes)
Stoneground mustard (this is my FAVORITE stoneground mustard, no sugar added and it’s got so much flavor but it is not as strong as a dijon)
Coconut aminos (soy free soy sauce that is the perfect combo of sweet, savory and umami and is often my “secret” ingredient)
Lemon Juice
Water (use filtered water to help thin the dressing)
Extra virgin olive oil
Sea salt
Pair this creamy vegan raspberry vinaigrette with my Raspberry Kale Quinoa Salad aka my Barbie’s Hot Pink Salad!
This dressing also goes great with a summer salad and lettuces like butter leaf lettuce, gem lettuce and romaine.
Delicious Creamy Raspberry Vinaigrette (vegan)
Ingredients
- 1/2 cup raspberries
- 1 tbsp plain diary free yogurt
- 1 tsp stoneground mustard
- 1 tsp coconut aminos
- 1/2 lemon, juiced
- 1 tbsp water
- 2 tbsp olive oil
- 1/4 tsp sea salt
Instructions
- To a personal blender, add all your ingredients and blend until very smooth!
If Barbie can make it- so can you! 🙂
