This cowgirl caviar is my upgraded version of the traditional cowboy caviar aka Texas Caviar! Â I recipe tested this one a few different ways, wanting to make it a skin healthy recipe as well.
Pairing it with a tangy creamy chili lime sauce this “caviar” is delectable.Â
Plus, it’s WAY more cost effective than your traditional caviar! 😉
Making a Skin Healthy Recipe
To make it a more skin healthy recipe, I swapped the canned corn I see in many recipes for fresh mango. Â The reason I made this corn free is because most corn is GMO in the US.
It can be a trigger for may skin conditions like eczema and psoriasis so I try to omit corn and cornstarch where I can. Â Turns out, mango is not only a great skin healthy food but really makes this dish! Â It provides the perfect sweetness.
I paired this with other skin loving, healthy ingredients like onion, bell pepper, cilantro and avocado.
Adding in roasted cashews that provide the perfect crunch! Â (You didn’t think I’d forget about the perfect textures did you?!)
The Secret is in the Sauce
The sauce or dressing for this cowgirl caviar is what really takes it to the next level!
Combining a perfect mix of salt, acid, heat and fat with lime, flakey salt, chili powder, maple syrup and the secret ingredient, vegan cream cheese!
I had cream cheese in the fridge when I was recipe testing one day and I decided to add it and it gives it the perfect amount of creamy, tangy deliciousness, without the dairy!
Cowgirl Caviar (an upgraded cowboy caviar)
Ingredients
- 1 15 oz can black beans, rinsed and drained
- 2 cups bell pepper, diced red, orange, yellow or a mixture
- 1-1 1/2 alphonso mango, diced sub any other mango variety
- 1 avocado, diced
- 1 cup red onion, diced
- 1/2 cup roasted cashews, chopped
- 1/2 cup cilantro, chopped
- 1 jalapeño, seeded and minced optional but recommend!
Creamy Chili Lime Dressing
- 1/4 cup lime juice
- 1 tbsp maple syrup
- 3 tsp chili powder
- 1 tsp flakey salt sub 1/2 tsp sea salt
- 2 tbsp dairy free cream cheese
Instructions
- To a large bowl, add in to rinsed and drained black beans, diced bell pepper, mango, red onion, avocado, cashews, jalapeño and cilantro.
- To a personal blender, add in all ingredients for the "creamy chili lime dressing" and blend until smooth. Alternatively, add to a bowl and mix until completely smooth.
- Add dressing to the bowl of "cowgirl caviar" and combined until well mixed.
- Enjoy with chips, quinoa or rice!

FAQs
What if I’m nut free? Â Are there substitutions?
Yes! Â If you’re nut free you can still enjoy this recipe! Â Substitute the roasted cashews with roasted pumpkin seeds, or omit the nuts. Â For the vegan cream cheese, substitute for plain, dairy free, nut free yogurt.
Can I substitute black beans for something else?
I love the black beans in this, but if you want to substitute, I recommend using kidney beans (always rinse and drain the beans before adding)
What if I don’t like cilantro?
If you don’t like cilantro, don’t worry! Â You can still make it without. Â There isn’t an herb that I would recommend substituting for cilantro, however, if you want a little something else green, add a handful of chopped romaine lettuce.

Hi Kathryn! Unfortunately I don’t count calories for my recipes, I just focus on nutrient dense recipes with whole food ingredients. 🙂 I know there are calculators online that can be helpful if that’s something you need. Hope that helps and you get to try the recipe.

So fresh and delicious! Makes about 6 hearty servings. We loved it so much. Has a good crunch to it, and the dressing is great with it. We didn’t have a mango, so used two fresh peaches, instead, and it was great!! Thank you for an amazing dish!

Can this beaded ahead of time, for meal prep, or will the avacados turn brown?

yes you make ahead of time! You can either leave the avocado for the last minute or just make sure you add enough of the dressing, lemon or lime juice will keep it from browning and keeping it in an airtight container refrigerated to stay fresh 🙂
