For me, cooking is an opportunity to get creative and have fun! It really doesn’t need to be a daunting task to whip something up in the kitchen for those who don’t cook much. These rainbow toasts were just too fun to make and super easy too! I picked up some locally made gluten free buckwheat toast for these but you can use any bread you like.
I have been making homemade hummus for a while now and exploring new things to add recently. Not only do beets compliment hummus wonderfully in the flavor, they are so nutritious and make it an awesome bright pink color. Hummus goes well with so many things but I decided to make some toasts since avocado toast sometimes feels like the only one that exists these days!
The hummus takes minutes to make! If you decide to use freshly made beets that will take a bit longer in the prep to cook them. However many markets now have beets already cooked. Trader Joe’s carries them or you can find a brand called, Love Beets in many health food markets like Whole Foods. I would avoid any canned beets however because the flavor and texture are a bit different. For the hummus, you can use a high speed blender such as the Vitamix (this is the one I use!) or a Cuisinart! After toasting the bread I added a little ghee on them first to just had some added flavor the toasts. This is optional but I definitely recommend if you eat ghee! After the ghee, you can put on as much hummus you want then toppings.
- 1 15 oz. can of Chickpeas (drained)
- 2 tbs of Tahini (or sesame seeds if using a Vitamix, it will puree them)
- 1 clove of Garlic
- 1 small Beet (cooked)
- ½ Lemon (juiced)
- Sea Salt to taste
- 2 tbs of Extra Virgin Olive Oil
- 1 tbs of Filter Water
- 5 Kalamata Olives (optional)
- Dash of Cumin
- Put all ingredients into blender or cuisinart.
- Blend until smooth.

For the Rainbow Toasts, you’ll need red, orange, yellow and green bell peppers and a head of cauliflower. Then thinly slice pieces of the bell pepper where there is a natural curve in the vegetable. This will help so you have those rainbow-like arches. Then cut into different sizes to fit on your toasts. Then put little pieces of raw cauliflower around to serve as the clouds! These toasts are lots of a fun and a hit with everyone, because who doesn’t love rainbows?!
