Who doesn’t love sweet potato fries?! All fries are incredible in my opinion but sweet potatoes when roasted are divine. Sweet potatoes have so many health benefits. They are a powerful anti-cancer food, high in fiber and Vitamin C, Vitamin A, Mangese, Copper and Vitamin B6 just to name some. You can actually boost your immune system big time eating this simple meal. The Jalapeno Avocado dip gives these fries what they really need, a perfectly balanced bite from the jalapeno and the lemon!
They are also so easy to make. First, in a large mixing bowl, I mix together 2 tbs of Chosen Foods avocado oil and the spices. This is my favorite and only oil I use for them because it has a high smoke point. Meaning the oil will not become rancid or carcinogenic cooking with it.
Many vegetable oils turn into trans fats at a high heat. Trans fats are one of the worst things you can consume. It contributes to heart disease, cancers and many other chronic health conditions. I keep these fries completely heart-healthy using this avocado oil. I have tried several brands and I think this one tastes the best and it the safest brand to use at high heat!
Not only is it important to cook with the right oil but being mindful of what you are cooking on. I grew up in a house where we always cooked on and with aluminum foil. Simply because we didn’t know better. It is said that aluminum when cooked with at high heats can lech into the the food you are eating, making your food toxic. I was shocked when I heard this since I had been using it for so long. Thankfully, there is a very easy fix, parchment paper! It works exactly the same for baking and roasting. I buy this one!
Now that I have my non-toxic Avocado Oil and Parchment paper, I roasted veggies all the time. It’s easy, delicious and super healthy!
After mixing together the oil and spices, I wash, peel and slice three sweet potatoes into thick 1 in. waffle fries. Then I mix together the oil, spices and sweet potatoes. For the spices I really love Simply Organic. Not only are they organic but I really taste the difference in the taste and quality. Here are the spices I use for this blend: Oregano, Smoked Paprika and Garlic. I use this blend on really any vegetable, it’s great for roasting veggies!
I lay them flat on a baking sheet with parchment paper and flip them once half way through while baking. I also reuse my parchment paper a few times for roasting. It lasts 2-4 rounds of baking which is awesome.
- 3 medium Sweet Potatoes (washed, peeled and cut into 1 in. thick wedges)
- 1 tsp dried garlic
- 1 tsp smoked paprika
- 1 tsp sea salt
- 1 tsp dried oregano
- 2 tbs of Avocado Oil
- 1 Avocado
- Juice of 2 small Lemons
- 1 tsp Jalapeno (minced- more if you want more heat)
- 1 clove of Garlic (minced)
- 1 tbs Olive oil
- sea salt to taste
- In a large bowl mix together Avocado oil, dried garlic, smoked paprika, sea salt and dried oregano. Mix and add in cut sweet potatoes.
- Mix together and place on a baking sheet with a piece of parchment paper.
- Turn oven onto 425 degrees F.
- Bake for 20 minutes then flip the sweet potatoes over.
- Bake for another 25-30 mins or until desired crispiness.
- While the sweet potatoes are baking, make your dip.
- In a small bowl mash one avocado until smooth.
- Add olive oil, minced garlic, jalapeno, lemon juice and salt and mix together.
- Serve together and enjoy!
While the sweet potatoes are baking I make the Avo Dip! Which again, is super simple. I mash an avocado into a bowl until smooth, add the olive oil, lemon, sea salt, garlic and jalapeno and mix together. You can do a little less or more jalapeno depending on the spiciness of that pepper and your desired heat.
Jalapeno also has many health benefits including being very anti-inflammatory. Paired with lemon and garlic this sauce is immune boosting and great if you are feeling a little under the weather. Instead of making an aioli or dip with dairy, I swapped it out with good fats like avocado and olive oil. It makes for a thicker texture which is great when it comes to dipping.
I love serving this rustic dish when an entree or as appetizer to have out when having friends over. They’re a real hit (especially for any vegan friends)!
