This vegan apple pie ice cream is truly mind blowing!
It’s reinventing how we think of apple pie à la mode. It tastes just like apple pie with all the rich caramelized apple flavor but in ice cream form.
Did I mention it’s vegan and gluten free? But don’t worry! It’s insanely creamy and no ice cream machine required.
How to make ice cream without an ice cream machine:
This is one of my favorite hacks when it comes to healthy easy recipes!
All you need instead of an ice cream machine is a blender and ice cube trays. These silicone ice cube trays are the ones I use for all my healthy ice cream recipes! They make it super easy to pop out the cubes and add them to the blender.

You simply cook the apples on the stovetop allow to cool and add in the remaining ingredients and blend until smooth.

Pour the ice cream mixture into the silicone ice cube trays and freeze for several hours or overnight.

Once you’re ready, pop all the cubes out and into your blender and blend for about 30 seconds or until it becomes smooth. (If using a high speed blender, use the tamper to push down as you go and use the “frozen desserts” option if you have one

Your ice cream will be a perfect creamy thick soft serve texture. You can enjoy right away or add to frozen apple cups or an airtight container and freeze for 30 mins to 1 hour or when you’re ready to enjoy!
Cooking the apples on the stovetop with a mixture of spices and unrefined sugars allows you to create an incredible apple pie filling!
What you need for this recipe:

Apples (you can use a mixture of apples of this or pick one-I like Granny Smith, pink lady, Braeburn or fuji.

Unrefined coconut oil

Maple Syrup and Coconut Sugar (unrefined sugars that help to caramelize the apple mixture)

Spices (I love adding cinnamon, cloves and nutmeg)

Lemon juice (a touch of acidity to the apple pie filling mixture helps the flavor)

Coconut cream (the hardened part from a can of chilled full fat coconut milk overnight or coconut cream)

Dairy Free Sweetened Condensed Milk (this gives the ice cream it’s extra creamy texture, you can also use the oat milk one)

Apple Pie Ice Cream (vegan)
Equipment
- Blender
- silicone ice cube trays
Ingredients
- 4 apples, tops sliced off and hallowed out for serving the ice cream in (see what types of apples are best for this recipe above)
Apple Pie Filling:
- 3 apples, peeled and sliced
- 2 tsp coconut oil
- 1/4 cup maple syrup
- 2 tsp coconut sugar
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/8 tsp ground cloves
- 1/8 tsp nutmeg
- 1 tsp lemon juice
Remaining Ingredients:
- 1 can full fat coconut milk only the hardened solidified part at the top after refrigerated overnight (sub for half a can of coconut cream)
- 1/2 cup dairy free sweetened condensed milk options linked above
- 1/4 tsp cinnamon
- 1/2 cup dairy free milk I like oat milk or cashew milk
Instructions
- Start by slicing the tops off of 4 apples of choice. Use an ice cream scooper to hollow out the apples, creating serving cups.
- Place the hollowed apples with the sliced "tops" onto a plate and into the freezer.
- Once removed, cut around the seeds of the apples to save apple pieces for the filling and discard the bits with seeds.
- Peel and slice 3 more apples.
- To a saute pan, add coconut oil and heat on low-medium heat.
- Add in all the apple slices, maple syrup, coconut sugar, cinnamon, cloves, nutmeg, lemon juice and vanilla extract.
- Mix together and sauté, stirring as you go on medium heat for about 20 minutes until the apples become caramelized. (I use a nonstick pan for this)
- Once cooked, allow to cool and add into a blender, along with the hardened solidified part of coconut cream that comes from a can of full fat coconut milk chilled overnight OR from a can of coconut cream, sweetened condensed milk and an extra touch of cinnamon.
- Blend all ingredients until smooth and pour into silicone ice cube trays and cover with the lids. (These trays are easy to pop out once frozen-the ones I use are linked above)
- Freeze for 5-6 hours or overnight and then pop them out into a blender (or a large bowl then transfer to a blender)
- Blend until until a smooth ice cream forms. If using a high speed blender, use a tamper to push down as you go or turn the machine off in between blending and mix with a spoon until it becomes blended but still thick.
- Add the ice cream to your apple serving cups and enjoy or freeze for until ready to serve. Enjoy!
FAQs
Does this recipe taste like coconut at all?
No, the coconut products don’t have a coconut flavor and just make sure you’re using unrefined coconut oil, vegan butter or avocado when cooking the apples if you don’t want any coconut flavor.
Can I make this recipe without coconut?
Yes! You can make some substitutions if you’re allergic to coconut for this recipe. For the sweetened condensed milk, you can substitute it directly for this one made of oat milk. For the coconut cream in this recipe you can use cashew cream, sub coconut oil for avocado oil or vegan butter and coconut sugar for a little brown sugar or sugar of choice.
Can we make this recipe with something besides apples?
Yes! I have ice cream recipes without the ice cream machine and in the frozen fruit like my orange creamsicle ice cream, frozen lemon sorbet and strawberry ice cream!
How do you hollow out the apples?
I find an ice cream scooper like this one works best to scoop out, use can also try a medium size spoon and and a small knife. It’s similar to the idea of removing the flesh of a pumpkin, but much easier.
