If you love cheesecake and pecan pie, this No-Bake Oreo Caramel Pecan Cheesecake brings the best of both desserts together!
With a thick chocolate cookie crust, rich and creamy cashew-macadamia filling, and a homemade caramel pecan topping, every bite is decadent, sweet, and full of texture.
It’s the kind of dessert that makes the holidays feel extra special. And the best part? There’s no oven required!
A Holiday Cheesecake Inspired by Family Traditions
This recipe actually started with a special birthday memory. My birthday falls on Christmas Day, and one year my mom made me an Oreo cheesecake to celebrate. It’s a dessert we’ve always loved, and pecan pie is another family favorite during the holidays.
I thought, why not bring the two together?
The result is this No-Bake Caramel Pecan Cheesecake. It combines everything we love about a classic chocolate cookie cheesecake with the buttery, sweet flavors of pecan pie. It’s a fun twist on two familiar desserts, and it has quickly become one of my favorite holiday dessert ideas.
Whether you’re celebrating Christmas, hosting a holiday dinner, or bringing dessert to a gathering, this cheesecake is sure to make an impression.
What Makes This No-Bake Caramel Pecan Cheesecake So Good?
There are three delicious layers that make this dessert special.
The chocolate cookie crust creates a thick, crunchy base. You can use traditional Oreo cookies, gluten-free Oreos, or Simple Mills Cocoa Cashew Sandwich Cookies. This makes it easy to choose the cookies that work best for your dietary needs.
The cheesecake filling is made with cashews and macadamia nuts. When blended until completely smooth, they create a naturally rich and creamy texture. Dairy-free vanilla yogurt and coconut cream add even more creaminess, while fresh lemon juice balances the sweetness.
Then there’s the caramel pecan topping! It’s inspired by classic pecan pie, with a homemade caramel sauce that coats plenty of chopped pecans. The topping adds a buttery, crunchy contrast to the smooth cheesecake filling.
Together, these layers create a dessert that tastes like it took much more effort than it actually did!
An Easy Make-Ahead Dessert for the Holidays
One of my favorite things about no-bake desserts is how much easier they make holiday entertaining. There’s no need to worry about oven space or baking times. You can prepare this cheesecake ahead of time and let it chill in the refrigerator until you’re ready to serve.
I recommend making it the day before your gathering. This gives the cheesecake plenty of time to firm up and makes slicing and serving much easier!
The caramel pecan topping can also be prepared ahead and added once the cheesecake has set.
It’s a wonderful dessert to bring to Christmas dinner, holiday parties, or any special occasion. Even guests who don’t follow a dairy-free diet will love how rich and creamy it is! 🙂

Instructions
Make the Chocolate Cookie Crust
- Add the chocolate sandwich cookies to a food processor. Process until they form fine crumbs.
- Transfer the crumbs to a bowl. Add the melted vegan butter and mix until evenly combined.
- Press the mixture firmly into the bottom of an 8-inch springform pan. Create an even, thick layer.
- Place the crust in the freezer for 20 minutes while you prepare the filling.
Make the Cheesecake Filling
- Add the cashews, macadamia nuts, dairy-free yogurt, coconut cream, maple syrup, melted coconut oil, lemon juice, vanilla, and salt to a high-speed blender.
- Blend until completely smooth and creamy. Stop to scrape down the sides as needed. A high-speed blender like a Vitamix does not require soaking the nuts first.
- Pour the filling over the prepared crust. Smooth the top with a spatula.
- Cover and refrigerate overnight, or until completely firm.
- Make the Caramel Pecan Topping
- Add the coconut oil to a small saucepan over low heat. Once melted, stir in the coconut sugar and maple syrup.
- Increase the heat to medium-high. Stir constantly as the mixture begins to bubble. Continue cooking for 2–3 minutes.
- Add the dairy-free milk and stir until smooth and glossy. Remove from the heat.
- Stir in the chopped pecans until they are evenly coated in caramel. Allow the topping to cool before adding it to the cheesecake.
- Assemble and Serve
- Once the cheesecake has set, spread the cooled caramel pecan topping evenly over the surface.
- Return the cheesecake to the refrigerator for 30–45 minutes to allow the topping to firm.
- Carefully release the springform pan. Slice and serve chilled!
