Cucumber salads are a summer staple for a reason.
They’re easy to prepare, great for hydration, and can balance heavier dishes perfectly.
This recipe uses a long English cucumber, about a foot and a half in length, sliced thin (about ⅛ inch thick) using a mandoline.
The key is layering fresh, crisp vegetables with a rich dressing to complement without it being overpowering.
Benefits of Using a Mandoline
There’s a time and place to use a mandoline and often times, it really elevates the dish. Using a mandoline slicer allows you to get thin cucumber and radish slices quickly that are the same size.
You can even make paper-thin slices with slicer, but I find about a 1/8 inch slice to be perfect! This texture is key for the dressing to absorb fully and for the salad to have that signature crunch.
I got my first mandoline slicer, a Japanese Benriner, about 7 years ago and I’ve benefited using it ever since. It’s one of my favorite kitchen tools!

Cucumber Salad with Creamy Maple Mustard Dressing
Equipment
- mandoline slicer of sharp knife see mandoline info above in blog post
Ingredients
- 1 long English cucumber sliced into ⅛-inch rounds
- 2 small radishes sliced paper-thin
- ¼ red onion thinly sliced
- 1 cup cooked rice white or brown
- ¼ cup raw or roasted cashews
- 1 to 2 tablespoons black sesame seeds
- ⅓ to ½ cup Creamy Maple Mustard Dressing
Instructions
- Use a mandoline to thinly slice the cucumber and radishes.
- Slice the red onion as thinly as possible.
- In a large bowl, toss the cucumber, radish, and red onion together.
- Add the cooked rice, cashews, and sesame seeds.

- Toss gently until everything is well combined.
- Serve immediately, or chill in the fridge for 15 minutes before serving.
