Wild Rice Stuffing in Roasted Acorn Squash
This recipe is perfect for the Fall/Winter season, it’s hearty and filling. It can be served as a main dish or a festive side. The roasted acorn squash is one of my favorite squash this time of year but you can also make the wild rice stuffing as a side dish! I love how this dish is gluten free and dairy free but nobody will even know the difference!
Roasted Sumac Carrots
Let’s just say, I used to kinda sorta hate roasted carrots…and now I LOVEEEE them. I found some other recipes (no offense) didn’t have much seasoning/flavor and often uncooked but these are truly a dream come true and make the perfect plant based dish.

It is time to STOP making the same oil Brussels Sprouts recipes and make this Za’atar Shaved Brussels & Kale salad!! This was the recipe that inspired me to want to create a blog in the first place and I’ve gotten so many messaged about it since then.
It has dates and kalamata olives with make the perfect sweet and savory combo. This recipe is also designed for bone health, which could be a fun way to how you are cooking with love for friends, family and yourself!

I’m told this is one of my best salads! It includes all the best seasonal produce and is oh so festive if celebrating Christmas or going to a holiday party! The herby vinaigrette in this recipe really brings the flavor.

This recipe is inspired by a famous lentil soup I used to get in NYC. I made it vegan with a few tips and tricks to still make it really rich and flavorful just the one I used to get. Warm and comforting, lentil soup is a must this time of year!
Pumpkin Lentil Bolognese
This Italian inspired dish is one of my go-tos! It’s the recipe that is so easy to prepare yet is filled with rich flavor. The lentil bolognese base paired with the sweetness of pumpkin makes this dish creamy and hearty without meat. Topping it with Brazil nut parmesan, you won’t miss dairy.
Creamy Pumpkin Sage Rigatoni
I have made this recipe SO many times because it is truly so easy to make and it’s insanely delicious. Think mac n cheese but with flavors of pumpkin & sage. Makes the perfect quick/fancy dinner or the perfect holiday side dish. You can even use macaroni elbows to make the perfect gluten free and dairy free side dish.
Lion’s Mane Mushroom “Steaks”
This recipe is actually mind blowing for those with miss the taste of meat dishes they used to eat. Even if you do it meat- this recipe is a crowd pleaser and it’s got significant health benefits. If you don’t want to miss out on the holidays with a plant based option, this is it! Pair with my garlic chive mashed potatoes and you’ll be in vegan heaven.
Whole Roasted Cauliflower
A whole roasted turmeric cauliflower with green tahini sauce is such to impress, not only in presentation but in FLAVOR!! The cool thing is it’s got amazing anti-inflammatory benefits!
Cauliflower Steaks
This was one of my first plant based recipes that really took off. It’s really got the perfect texture and flavor! If you want to skip meat or fake meat substitutions, I highly recommend cauliflower. It’s easy to find and pairs really well with a lot of sides. You can skip the vegan cilantro chutney with it if you want pair with potatoes and gravy etc instead!
Garlic Chive Mashed Potatoes
Perfect mashed potatoes is a MUST try! These are flavored with garlic and chives and oh so creamy and fluffy! I use a secret ingredient to make these taste just like the real deal mashed potatoes I grew up eating. I personally have been pairing it with this same Vegan Mushroom Gravy for the last years, it’s delicious and one my favorite ways to cut corners if you’re you’re doing a big holiday meal.
Fall Harvest Salad
All the best seasonal produce like kale, roasted sweet potatoes and dried cranberries to bring the perfect mix of flavors and textures. Topped with my delicious creamy maple mustard dressing!
White Bean Kale Salad
Inspired by the famous salad at Erehwon market in Los Angeles, this salad is famous for a reason!
60 Garlic Clove Potato Leek Soup
60 cloves of garlic may seem like a lot but it brings the perfect sweetness to the leeks and potatoes! Homemade cranberry sauce made without refined sugar and just a few simple ingredients. If you’ve ever had store bought before this, you won’t want to anymore. Cranberries are one of the most medicinal foods on the planet so I recommend making while cranberries are in season 🙂

This is the showstopper dessert!! Inspired by a family recipe I can’t say enough good things about this creamy delicious cheesecake. With orange and cranberry to have the perfect flavor combo and festive feel. Plus, it has a gluten free graham cracker curst and no refined sugar. Making this another perfect holiday dessert that many people can enjoy. The cranberries are providing wonderful health benefits too so it’s really a win-win.
Apple Cobbler
My apple cobbler that is so easy to make. Caramelized apples with a flakey gluten free crust. Once you peel your apples, this cobbler comes together so easily. Serve with vegan vanilla ice cream. A classic, delicious combo.
