This is my Whole Roasted Cauliflower with Green Tahini Sauce and it’s truly one of the most flavorful plant based recipes!
It makes for a wonderful and festive main dish that pairs perfectly with my turmeric quinoa.
Inspired by Middle Eastern flavors, the cauliflower is coated in a sweet marinade with spices of turmeric and paprika then whole roasted which creates an incredible flavor.
It’s so easy to make because you just place the entire cauliflower into the oven and let it roast.
Pairing it with a Unique & Delicious Green Tahini Sauce
Topping it with the most incredible vibrant green tahini sauce.
This green tahini sauce is inspired by flavors I fell in love with, especially traveling in the Middle East years ago. The fresh herbs of mint and cilantro really bring it life with spices of za’atar and caraway seeds that are so flavorsome.
The sweetness of the whole roasted cauliflower pairs beautifully with the green tahini sauce.
When I think of the future of plant based food, I feel like this recipe is a perfect example of it. Cooking for whole food ingredients and no lack of spices or savory elements.
How to make the perfect Whole Roasted Cauliflower
Step 1: Make your marinade combining turmeric, paprika, chili flakes, sea salt, maple syrup and avocado oil.
Step 2: Pour the marinade over your cauliflower, then brush the marinade or use your hands (you can use gloves if you want) to cover the cauliflower. Bake in the oven.
Step 3: While the cauliflower bakes, make your green tahini sauce. Adding all ingredients to a small blender or food processor (except za’atar and caraway seeds) blend until smooth then mix in remaining spices.
I personally like to roast the cauliflower by just marinating it and popping it in the oven! It’s just so easy!
Another option if you want a slightly softer cauliflower on the inside, you can boil it for a 5 mins in salted water before roasting. If boiling before you only need to bake for only 50 mins at 450F instead of 425F.
I’ve made it both ways and I think they’re both as good and flavorful. Regardless of the boiling process the bottom core of the cauliflower won’t be edible.

It’s easy to make and has dates and roasted cashews in it. This really compliments the Middle Eastern flavors of the roasted cauliflower itself.
This recipe is also great just paired with plain cooked quinoa or brown rice!

Whole Roasted Cauliflower with Green Tahini Sauce
Equipment
- small blender or food processor
Ingredients
- 1 head of cauliflower leaves trimmed off
Turmeric Marinade
- 2 tbsp avocado oil
- 1 tsp maple syrup
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/2 tsp chili flakes
- 1/4 tsp sea salt
Green Tahini Sauce
- 1/4 cup tahini
- 1 handful fresh cilantro
- 1 handful fresh mint
- 1 lemon, juiced
- 1 garlic clove, minced
- 1/4 tsp sea salt
- 2 tsp coconut aminos
- 2 tbsp water
- 1 tbsp za'atar
- 1/2 tsp caraway seeds
Instructions
- Preheat oven to 425F.
- To a small bowl, add in all ingredients for the turmeric marinade and mix until well combined.
- Clean a whole cauliflower and trim off excess leaves and place onto a baking sheet.
- Pour the marinade on top of the cauliflower and use a brush or your hands to coat the whole cauliflower in the marinade.
- Bake for 1 hour.
Make the Green Tahini Sauve
- While the cauliflower roasts, place all green tahini ingredients into a small blender or a food processor (except for za'atar and caraway seeds) and blend until smooth.
- Then add in za'atar and caraway seeds and mix until well combined.
- When the cauliflower is done cooking, pour the green tahini sauce over the cauliflower.
- Enjoy!

Made the cauliflower tonight. I added half a block of silken tofu to the sauce to increase the protein…and increased the spices a little to compensate. Delicious!
