You came to the right place with these vegan gochujang tahini noodles!
I recently put this recipe together after a long time, because sometimes I don’t eve have a lot of time to cook! I couldn’t believe how delicious these and how little time they took. Not mention, all the ingredients where things I had here, mostly being pantry items.
I think back to when I was in college and how often I would have loved to have a recipe like this on hand, or after 14 hour days sometimes when I worked in production.
This recipe is comforting, filling and delicious! Yet it’s made vegan, gluten free and without refined sugar.
These vegan gochujang tahini noodles are basically healthy comfort food.
MADE IN ONLY 5 MINUTES!?
The beauty of this sauce is it comes together by simply being mixed in a bowl and added to your noodles.
I use this brand of gochujang I found online, which is the only one that is vegan and gluten free but still tastes amazing and authentic.
Gochujang in a Korean chili paste packed with flavor, it’s a little sweet and spicy!
To make these noodles extra creamy, I add tahini!
Tahini is made of sesames and pairs really well with gochujang, it’s a great source of fiber, protein, vitamins and minerals, including calcium!
Adding in some coconut milk, maple syrup, coconut aminos, lime juice, ginger and sea salt to make these noodles full of flavor!
GLUTEN FREE MADE EASY
After you mix together your sauce, all your have to do is cook up some ramen noodles. I actually start cooking the noodles first and by the time they are done, the sauce is ready!
I love this brand of gluten free ramen noodles, I have been using them for years and they’re a complete game changer!
It’s great to always have these on hand so whenever I’m craving noodles or need a quick recipe like this. I also use these noodles in my vegan tahini sriracha ramen, another delicious comforting and healthy recipe!
A little tip for switching to a plant based diet is to always have good healthy pantry staples on hand! 🙂
Following the package instruction, these noodles only take minutes to make, I always recommend checking them before straining to get your desired texture.
Add them back to the pot with the sauce and heat for a few minutes and you’re ready to serve!
Make It Your Own
You can add any toppings, vegetables or keep just it simple. I’ve served with steamed or sautéed vegetables like broccoli or bok choy.
To top, I added some cilantro, sesame seeds and lime wedges.
You can also enjoy this with a side of toasted nori snacks.
5 Minute Gochujang Tahini Noodles
Ingredients
Gochujang Tahini Sauce
- 2 tbsp gochujang (korean chili paste) make sure you get vegan, gluten free- brand used linked above
- 2 tbsp tahini
- 1 lime, juiced
- 1 tbsp pure maple syrup
- 1 tbsp coconut aminos can sub 1/2 tbsp tamari or soy sauce if not gluten free
- 1/4 tsp sea salt
- 1/2 piece ginger, peeled and grated
Remaining Ingredients:
- 2 dried ramen noodles I used gluten free, linked above
Optional Toppings:
- small handful cilantro or green onion, chopped
- sesame seeds
- lime wedges
Instructions
- Bring a pot of water to a boil.
- While you do that add all your "Gochujang Tahini Sauce" ingredients to a bowl and mix together until smooth.
- Cook ramen noodles according to package instructions, usually for about 4-5 minutes.
- Strain the noodles and place them back into the pot and pour the sauce over the noodles. On a low to medium heat, mix together until the noodles are well coated.
- Once the noodles are warm, add them to a bowl with any toppings you like and enjoy!

*Note: gochujang has a small amount of soy in it so if you are allergic to soy, try substituting it for this sriracha.
