Sometimes the best things in life truly are the simplest ones. These are easy to make and rely on just a few whole food plant based ingredients you most likely already have in your house.
Spoiler alert: It’s tastes like a healthy macaroon but with way less work!
When making food things with minimal ingredients, the key is using technique combined with good quality ingredients. This is the perfect example of that. I create these cookies simply out of wanting a healthier macaroon. The natural sweetness of these ingredients make it so you don’t need any added sugar. Banana and coconut are two great sources of healthy carbohydrates, glucose as well as being packed with vitamins and minerals.
I used carob chocolate for theses but you can use any chocolate you like. I love carob because it emulates the flavor and texture of chocolate without any of the caffeine and is a great source of calcium. If you’re on plant based diet, I highly recommend incorporating carob into your diet.
These cookies hold up really well in the fridge for up to 2 weeks in an airtight container so you can make a big batch ahead of time. I post these online TikTok and Instagram and got great feedback from everyone who tried them. They’re great to make for traveling as well!
- 1 medium banna, mashed
- ¾ cup finely shredded coconut ( I used Let's Do Organic brand)
- ¼ cup melted chocolate ( I used a Better Carob bar, a chocolate alternative made of carob)
- Optional: A dash of cinnamon and/or sea salt
- In a bowl, mash the banana until very smooth.
- Add in your coconut and an additional add ins like cinnamon or sea salt.
- Mix until well combined.
- Form 5 cookies and press them down on a baking sheet lined with parchment paper.
- Bake at 375F for 20 minutes.
- Cool completely, pop in the fridge or freezer for several minutes to quicken the process.
- In a sauté pan melt your chocolate (or carob) of choice.
- Using a spoon, drizzle the chocolate onto the cookies and pop into the freezer to allow the chocolate to solidify.
- Store in the fridge in an airtight container.
